Why shrimp triggers such powerful reactions

The main culprit in shellfish allergy is a muscle protein called tropomyosin. It is remarkably stable, survives cooking and digestion, and looks almost identical across shrimp, crab, lobster, and even dust mites and cockroaches. When the immune system flags tropomyosin as a threat, it produces IgE antibodies that lie in wait.
